Job Description:


Job Summary: 


Provide direct operations leadership for the Food Court, Ithaca Bakery, and all five satellite retail locations. Responsible for enterprise wide GrubHub point-of-sale implementations and operations. The general responsibilities of the position include those listed below and will continue to evolve around the needs of the IC campus community.



Supervision:



 This position reports to the Associate Director Campus Dining.


This position provides direct supervision for all campus retail full time, part time and student staff.



Job Responsibilities: 


  • Provide direct operations leadership for all Ithaca College campus retail operations including the Food Court, Ithaca Bakery, Library Café, Park Café, Business School Café, CHS Café and Southhill Sweets.
  • Serve as Dining Services liaison with Human Resources department by creating and implementing recruitment and on-boarding processes for all retail staff.
  • Responsible for all unit budget adherence and financial outcomes.
  • Perform scheduling, coaching, mentoring, and supervision of student, professional, and other staff members.
  • Assist with training and continuing professional development and education for all department staff members to promote a safe work environment for employees.
  • Provide safety-related training by confirming compliance with safety and loss prevention programs according to Health Department, Ithaca College and Dining Services standards.
  • Ensure outstanding guest experience by overseeing and supporting staff in upholding high and safe standards of appearance, maintenance, and cleanliness in all areas of the dining unit.
  • Arrange daily operations and services to ensure employees have appropriate equipment, inventory, and resources to perform their jobs and meet goals and deadlines.
  • Recommend changes in operations based on standards, identify appropriate resources, and assist in implementation plans.
  • Confirm daily menu signage is appropriately and accurately presented with the correct allergen, ingredient, and nutrition information.
  • Develop and maintain an in-depth, working knowledge of all dining software solutions, including Fusion, BarTender, and NetNutrition.
  • Assist with inventory and the ordering of all supplies and services, as needed.
  • Assist with the development of account business plans to enhance customer service, facility layout and design, account profitability and retention, and client and customer satisfaction.
  • Develop and facilitate data analysis and training at the operational accounts. Visit and inspect current accounts, providing objective feedback based on operational standards.
  • Plan projects, including defining objectives, methods, timetables, and budget.
  • Ensure that management team(s) and staff have sufficient resources to perform their jobs and to meet goals and deadlines.
  • Perform inspections and audits to ensure regulatory compliance.



Required Qualifications:


  • Five plus years of food and beverage leadership in higher education dining, varied restaurant/dining experiences, multi-unit management experience, administrative experience, and proven leadership abilities required.
  • Previous supervision of professional and student staff required.
  • Experience developing and implementing procedures for recruiting, hiring, on-boarding and training student staff is required.
  • Knowledge and understanding of best practices, operations, trends, and standards in culinary/food service is required.
  • Experience developing and overseeing a supply, services, and staffing operating budget is required.
  • Knowledge of Hazardous Analysis Critical Control Points to control the outbreak of food borne illnesses is required.



Preferred Qualifications:


  • Knowledge of general business administration including the knowledge of account development and account operations, and the ability to maximize profit attainment and profit growth.
  • Culinary/kitchen leadership experience with menu and recipe development skills. 
  • The ability to establish courses of action for self and others, ensure that work is completed efficiently, adjust priorities, track progress and identify issues, remove barriers, and leverage resources.
  • Knowledge of the proper procedures for maintaining control of inventory, including checking in merchandise, tracking outgoing merchandise, ordering merchandise as needed, and controlling shrinkage.
  • Knowledge of and the ability to use basic financial analysis (e.g., feasibility studies) related to unit operational effectiveness or account profitability.
  • Knowledge of the procedures to establish purchasing requirements, develop and place orders, ensure merchandise is received accurately and on time, and store merchandise properly.
  • The ability and willingness to delegate the authority to complete work activities, giving clear direction as to what needs to be done, and monitoring performance against a predetermined deadline and/or measure of quality to ensure quality and timely completion of assignments.
  • The ability to develop and maintain professional, trusting, positive working relationships with clients, supervisors, staff, managers, customers, and vendors.
  • Knowledge of Federal, State, and Local regulations, as well as IC and client policies and procedures (e.g., Service Contract Act, HR policies and procedures, labor relations, Department of Labor Audit Protocols).
  • Excellent oral and written communication skills.
  • The ability to provide excellent service to external and internal customers.



Work Environment:


Work of the incumbent is carried out within an accessible, safe, indoor environment. Occasional carry or lifting 50 lbs. The incumbent will be issued and required to wear slip resistant shoes, cut gloves, and operate kitchen equipment. May be required to work overtime, nights and weekends as needed.


This position is 40 hours per week, 52 weeks per year.

Hiring Range:


$68,000 to $71,000 commensurate with qualifications and experience.
