SHORT DESCRIPTION SUMMARIZING POSITION:
Full time, 12 month specialized faculty position that will coach the meats judging and meat animal evaluation teams, teach meats-related courses, lead youth and stakeholder outreach and extension programs, and assist in operations of Meat Science Lab and salesroom. Initial appointments are typically at the rank of Instructor, Lecturer, Teaching Assistant Professor or Clinical Assistant Professor. Senior level appointment to Sr. Instructor/Lecturer or Teaching/Clinical Associate Professor or Teaching/Clinical Professor may be available for candidates with significant additional experience and stature.
55% Meats Judging/Teaching:
1. Serve as the coach of the University of Illinois Intercollegiate Meats Judging Team and Co-coach the meat animal evaluation team
a. Recruit new members for the meats judging team
b. Introduce meats judging to prospective team members through teaching ANSC 215: Introduction to Animal Evaluation (fall, half-semester course)
c. Teach ANSC 310 Meat Selection and Grading (fall, full semester course)
d. Coordinate practices for team both within Meat Science Lab facilities and at external facilities
e. Arrange travel, contest entry, and logistics for team participation in intercollegiate meats judging contests
f. Escort and coach teams as they participate in contests
g. Co-teach ANSC 211: Breeding Animal Evaluation (50% responsibility)
h. Co-teach ANSC 301 Food Animal Production, Management and Evaluation
2. Prepare carcasses for evaluation, collect needed data, and fabricate products for practices and classes
20% Meats Outreach/Extension:
1. Develop and lead youth programs focused on meat and animal evaluation
2. Assist other educational partners in developing meat evaluation programs
3. Cultivate relationships with meats judging alumni to provide for a sustainable future of the program
4. Coordinate Illinois FFA Meats Judging contest
5. Judge Summer 4H carcass shows
6. Develop summer youth activities to complement existing programs and provide emphasis on meats and meat animal evaluation (Meats Judging camp, Livestock judging camp etc.)
20% Assist with operations and management of Meat Science Lab facilities:
1. Assist the Unit Manager in the on-site management of unit slaughter, fabrication, and processing operations
a. Assist in the supervision of various groups of employees that may include full-time classified personnel and part-time hourly staff
b. Participate in ongoing management training that may include, but is not limited to areas such as human resources, environmental management, animal care, and budgeting/business management
c. Provide training to part-time hourly staff in slaughter and fabrication procedures
2. Partner with faculty and staff to collectively manage and allocate unit resources, ensuring the facility meets its research, teaching, and production objectives. Participate in slaughter, carcass fabrication, and meat packaging to support unit needs for research, teaching, and outreach
3. Coordinate with faculty and staff to arrange coverage and staffing solutions for both scheduled and unexpected absences of full and part-time employees
5% Other Duties as agreed upon with Department Head and Director of Farms
POSITION REQUIREMENTS & QUALIFICATIONS
Education
Required: M.S. degree in Animal Science or a related field.
Preferred: M.S. degree with a specialization in Meat Science
Individuals working toward a degree may be considered, but the degree must be obtained by the starting date.
Individuals with a MS or DVM degree may be appointed as Instructor. PhD is required for Lecturer, Clinical or Teaching Professor position.
Experience
Required: Meats judging experience including participation as a student and some assistant coaching experience. Informal classroom teaching experience.
Preferred: Formal assistant coaching or coaching experience for meats judging. Formal classroom teaching experience.
Knowledge, Skills, and Abilities
Preferred: Ability and proficiency in humane slaughter techniques and fabrication of meat animals and meat products.
Demonstrated involvement and leadership in meat-industry organizations.
SALARY AND APPOINTMENT DETAILS
This is a full-time (100%, 12/12 service basis) specialized faculty appointment. Salary is competitive and commensurate with qualifications and experience, while also considering internal equity. The budgeted salary range for this position is $65,000 to $80,000. Sponsorship for work authorization is not available for this position.
