The Corporate Cafeteria Chef will provide leadership direction and guidance for overall production of food in the Tyson Corporate Cafeteria. This will include implementation of systematic production methods standardized recipes portion control budget responsibility menu development and purchasing requirements and will need to comply with all policies and regulatory agencies.
The position will be responsible for the following duties:
Maintain a clean and organized kitchen
Ensure all food is being handled at the highest standards to prevent food borne illness
Ensure temperature and taste tests are being performed routinely and corrective action is taken as necessary
Ensures production and service personnel maintain personal hygiene standards to include proper hand washing and hair coverings and follows all governed regulations
Develop rotational and seasonal menus for the cafeteria and caterings that are creative and of sufficient variety utilizing Tyson products
Food will be prepared and served in such a way as to reach our customers at its optimal level of freshness
Fully understand each cafeteria Team Member s knowledge and skill level and provide focused training to improve weak skills
Develop positive perceptions of food in relation to appearance, presentation, taste, proper temperatures; variety and creativity in menuing special events and catering while leveraging existing Tyson product portfolio to showcase our own proteins and other items to our cafeteria customers
Maintain control of food and supply costs
Effectively manage inventory to its lowest functional level
REQUIREMENTS:
Education: Culinary degree or relevant experience.
Experience: 3+ years relevant experience with culinary degree; 8+ years of relevant experience without culinary degree. Menu development, manufacturing or two or more food service segments, i.e. restaurant, cafeteria, etc. is a plus.
Computer Skills: Microsoft Word, Excel and Outlook
Travel: 3-5 trips per year
Supervisory Responsibilities: Management and hourly staff
Additional skills: project and time management problem solving culinary creativity staff training and development clear and efficient communication.
Special Skills: Member of at least one professional chef association, preferred.
